I believe each individual ingredient takes us in a new direction. It’s as challenging as it is exciting to bring out the best in each ingredient; I like my dishes to be perceived as simplistic. However, in reality, each has a depth of complexity in terms of technique and composition.

With every passing season, our dishes evolve to highlight the best of what is about in the Adelaide Hills.

Our team grows and forages here on our property and we are focused on highlighting the bounty of the Adelaide Hills. The altitude, rainfall and soil here combine with the passion of our local farmers to produce a truly world class standard of produce. We are blessed to be in the epicentre of one of the food bowls of Australia and fortunate to have ingredients in our kitchen as soon as they are harvested.

ARTHUR HARDY'S CELLAR

We have excavated and restored Arthur Hardy’s 170 year old cellar underneath the original house. Our Sommelier Patrick White has selected two different wine matches from the extensive offering for both our short and long story menus.
